We try to ensure a constant supply in the kitchen, so here’s a recipe for making kefir at home:
Ingredients:
- 2 cups of milk (any kind of milk, such as cow, goat, sheep, coconut, or almond)
- 1 tablespoon of kefir grains (available for purchase online or at health food stores)
Instructions:
- Place 1 tablespoon of kefir grains into a clean glass jar.
- Pour 2 cups of milk over the kefir grains.
- Stir the milk and kefir grains together with a non-metal utensil, such as a wooden spoon or a plastic spatula.
- Cover the jar with a coffee filter or a cloth and secure it with a rubber band. This allows air to flow through the jar while keeping dust and debris out.
- Place the jar in a warm spot in your kitchen, such as in a dehydrator or near a window with direct sunlight. Let it ferment for 12-24 hours or until it thickens and has a tangy flavor. The longer you let it ferment, the tangier it will become.
- Once the kefir has fermented to your desired taste, strain the kefir grains from the liquid using a plastic sieve. The kefir grains can be used again for your next batch of kefir.
- Store the kefir in a glass jar with a tight-fitting lid in the fridge. It will continue to thicken as it cools.
Notes:
- It’s important to use non-metal utensils when making kefir as metal can react with the kefir and harm the culture.
- You can adjust the amount of milk and kefir grains depending on how much kefir you want to make.
- You can flavor your kefir with fruits, honey, or spices after it has fermented.
