Pesto Peanuts and Mozzarella Cheese

This recipe is truly delicious. I know becasue we just tried it. And the good thing is all these ingredients are availabe in Rwanda. So here is the recipe for pesto made with peanuts and mozzarella cheese, basil, and garlic:


Ingredients:

  • 1 cup packed fresh basil leaves
  • 1/2 cup roasted unsalted peanuts
  • 1/2 cup grated mozzarella cheese
  • 2 cloves garlic
  • 1/2 cup olive oil
  • Salt and pepper to taste

Directions:

  1. In a food processor or blender, pulse the basil leaves and garlic until finely chopped.
  2. Add the peanuts and pulse until they are finely chopped as well.
  3. Add the grated mozzarella cheese and pulse until combined.
  4. With the machine running, slowly pour in the olive oil until the mixture is smooth and well combined.
  5. Season with salt and pepper to taste.
  6. Serve immediately, or store in an airtight container in the refrigerator for up to one week.

You can use this pesto as a sauce for pasta, spread it on bread or crackers, or even use it as a marinade for chicken or fish. Enjoy!
