Roasted Salmon with Broccoli and Cauliflower Rice
Ingredients:
- 1 lb. salmon fillet
- 1 head of broccoli, chopped into small florets
- 1 head of cauliflower, chopped into small florets
- 1 small onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Rinse the salmon fillet and pat dry with paper towels. Season it with salt and pepper, and place it on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with thyme. Roast in the oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Meanwhile, prepare the broccoli and cauliflower rice. In a food processor, pulse the cauliflower florets until they resemble rice. Repeat with the broccoli florets. Set aside.

In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the diced onion and garlic, and cook until the onion is soft and translucent, about 3-4 minutes.

Add the broccoli and cauliflower rice to the skillet. Cook, stirring occasionally, for 5-6 minutes, or until the vegetables are tender and slightly browned. Season with salt and pepper to taste.
