One of my Fvaourite recomendations as a nutritionist is this delicious Rwandan recipe that features dodo (amaranth) is called “Dodo and Beans.” This hearty and nutritious dish is easy to prepare and can be served as a main course or a side dish. Here’s how to make it:
Ingredients:
- 1 cup of dried red beans
- 4 cups of water
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tomatoes, chopped
- 2 cups of dodo leaves, chopped
- Salt and pepper, to taste
- Vegetable oil
Directions:

Rinse the beans and place them in a large pot with 4 cups of water. Bring to a boil and then reduce the heat to low. Simmer for about 1 hour, or until the beans are tender.

In a separate pan, heat some vegetable oil over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent.

Add the chopped tomatoes to the pan and cook for a few minutes, stirring occasionally.

Add the dodo leaves to the pan and stir well. Cook for 5-7 minutes, or until the leaves are wilted.

Add the cooked beans to the pan and mix well. Add salt and pepper to taste.

Cover the pan and let everything simmer for about 10 minutes, allowing the flavors to blend together.

Serve the dodo and beans hot, garnished with some additional chopped dodo leaves, if desired.
